think about how many apples you have wasted because the gun Brown and how many more apples if you are speaking the inventor of Arctic apple and non-browning apples with infected have been longer than a conventional Apple how did you come up with anything to you Arctic Apple we really wanted to to use genetic engineering to address a problem in apples that we affect we thought was affecting consumption that will consumption to be on the decline but the same time fruit and vegetable as a whole category has been increasing baby carrot model in Ocala jumbo carrots putting a bag double care consumption now you see peppers and celery sticks and a whole host of melons strawberries grapes and all sorts of things in and snackable size containers the problem with apples is you can't just cut them and put them in a bag because they Michael Brown so we're looking at different ways to control Browning and not trade off flavor and we identified this new technology coming out of Australia that would allow you turn the gene that makes Browning off in the food itself and we thought well that's the real solution Brown is definitely recognized by consumers as a something that causes apples to be wasted if thrown out and see if we can get rid of it that enzymatic Browning in the Apple we felt that this was going to improve the product why does an apple Brown Apple it has a protein called polyphenol oxidase so that's an enzyme that drives a Browning reaction than Apple has a lot of polyphenols needs are the flavor and Aroma and the good things in a nap and they get broken down into that brown pee went by polyphenol oxidase the enzyme so insured that's that's the answer to Annapolis Brown when it's exposed to oxygen or where we've turned off or silence the ends that drives the brown reaction so what we've done is we've used the plants own genes are the apples own jeans and reinserted them into the plant and that mechanism has made it so that enzyme is no longer produce question a million times but tell me whether Arctic apple is just as healthy as a conventional Apple really simple answer is yes when the brownie reaction takes place and makes brown pigment save polyphenols and the total Alex antioxidants vitamins are consumed and I'm so in some ways Arctic apples are healthier because we preserve the substrate so they have higher levels of antioxidants in phenolic vitamin C if it doesn't go Brown House no that is bad in order gobble with turn off the enzyme that makes to go bit Brown when it's bitten or bruised or snow such sliced and things like that if it goes bad that'll because because of fungi and bacteria and other pathogens and they burn enzymes and so an Arctic Apple will still rot it'll get mold it'll go Brown when you see an infected by bacteria or fungi when Arctic Apple goes Brown do you know it's bad so we think this is an improvement people don't understand pineapple safe to eat when it's not plan for Apple varieties and we're also working on an Arctic Bartlett pear so Arctic Pairs and we're working in cherries as well and tattoo in tracks on and track someone's doing work with a non Browning avocado and so really know the opportunity to leverage our knowledge around polyphenol oxidase into other crops is something they were trying to take full advantage of so would you grow it now our Focus has to be growing Arctic apples in the Pacific Northwest we have an orchard in Washington state that we've purchased that's being fully planted to Arctic between now and 2021 we have expectations of planting around 18 1500 to 2000 no thank you very much for the interview and we wish you good luck with growing lots of beautiful fresh and healthy apples
